Victoria Sponge Cake is one of the very first cakes I learnt how to make in my teenage years. It was my ever reliable go-to recipe and a family favourite. I come from a family of bakers and we all baked this cake religiously and even taught our home assistants to bake it and everyone basically became an expert at this all-time British favourite. We fondly nick-named it equal-equal-equal because the three main ingredients are always equal in grams. Named after Queen Victoria, this quintessentially British bake is simplicity at it’s best, with delicious strawberry jam and pillowy soft cream, sandwiched between two light sponge cakes and a dusting of icing sugar. It always succeeds in winning over many loved ones, friends and customers alike.
